Ingredients
eggplant

sake
2 tbsp
mirin
2 tbsp
sugar
1 tbsp
soy sauce
2 tbsp
Steps
Cut the eggplant into rectangular slices.
Fry at medium heat for 1min on both sides
Steam for 1min on both sides
Add the sake, mirin, and sugar. Let the alcohol evaporate. Add the soy sauce and let it thicken.
Let it glaze with the eggplant slices for a few moments and serve.
(optiontal) Granish with spring onion and katsuobushi.
